Ingredients:

  • 1.5 kg pork ribs, cut into 2-inch pieces

Instructions:

  1. In a large pot, bring water to a boil. Add the pork ribs and cook for 1 hour, or until tender.
  2. Remove the pork ribs from the pot and shred them with two forks.
  3. Add the shredded pork ribs, onion, garlic, salt, black pepper, chili flakes, ginger, star anise, cinnamon, cloves, coriander leaves, cumin seeds, and coriander leaves to a large pot.
  4. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the vegetables are tender.
  5. Serve hot with rice or noodles.

Tips:

  • For a richer soup, use a combination of different cuts of pork, such as ribs, brisket, and pork tenderloin.
  • You can also add other vegetables to the soup, such as carrots, celery, or bell peppers.
  • If you don't have dried chili flakes, you can make your own by combining 1 tsp of black pepper, 1 tsp of dried ginger, and 1 tsp of star anise.
  • Serve with a side of crusty bread to soak up the flavorful broth.
